I know this thread is about a WOT series, but I'm more interested in an American Gods series.
I'm not a huge fan of American Gods. I love the concept and plot of it, but something with the way Gaiman structures his novels and characterizes makes his books hard for me to get through. However, I love all the film adaptations of his work, and I think the pacing and plot of American Gods would be absolutely perfect for a mini-series. A new adventure along the road trip in every episodes, and lots of very colorful characters. Some dark humor.
I'd definitely watch it.
As for WOT, I like the books and don't see any possible way that they could be translated into film with any sort of justice.
