"The Call of Cthulhu" itself is, of course a classic. Others that I would personally suggest:

"The Horror at Red Hook" (perhaps my favorite)
"Herbert West - Reanimator"
"Pickman's Model"
"The Shadow over Innsmouth" (another very popular classic)
"The Thing on the Doorstep"
"At the Mountains of Madness"
"The Festival"
"The Rats in the Walls"
"The Dunwich Horror" (extremely popular)

A slightly longer story that I originally bought in a separate book is "The Case of Charles Dexter Ward". I think it's appreciated best if you've read 4-5 of the stories above first.

If you buy any of the popular anthologies you'll probably get most of those stories as they're the most famous and popular.
