Ask him to keep track of materials cost. At the end, pay him that, then figure out how much time he has worked and figure out a good rate that you would be comfortable with paying him. That way for your peace of mind, you know that you've paid him more than his strict costs of the materials. You'll know that he's actually being paid to do work.
