Tamales: Basically you take a corn flour, make a dough, fill it with a meat, and steam it. They're quite delicious.
To go with that beans, spanish rice, smoked brisket, chili, jalapenos filled with cream cheese and wrapped in bacon, and I'm sure there was more, but it couldn't have been that great if I dont remember it.
Also had roast turkey, mashed potatoes, stuffing, veggies, and pumpkin pie at another meal a couple days before Christmas.
