Austin is nice and San Antonio is great if you know where to go but Lubbock pretty much sucks. There is reason most people in Texas live in a triangle that goes from San Antonio to Houston to Dallas. It really is no worse than most of the American west but there is a lot of nothing out there. Really depends on how much you like cotton fields and flat horizons.
If you go from Austin to San Antonio skip I35 an head down 281 through the Hill Country. You can find people saying y'all (most Texans spell it ya'll for some odd reason)anywhere you go but if you want people shooting you on sight you would have better luck in East Texas. You should see some cowboys hats and boots in Burnet though. Don't try pronounce the name of any of the towns you see though. Burnet is pronounced "burn-it" Blanco is pronounced "Blank-O" Guerne is pronounced "green" and Moscow is pronounced "Moss-cow"
If you have time visit the San Antonio zoo, it is one of the best in the country. Don't worry about standing out because you are not from Texas, most people in Texas are from somewhere else.
