I think people want to feel like they're eating better but either don't know what that really means or are willfully deluding themselves that these so-called "healthy" options are actually better for them. I can feel great about eating a salad instead of a cheeseburger if I pretend it doesn't actually have more fat and calories than the cheeseburger.
That's an interesting point. Depressing, too, if most people really can't see that health should always be incorporated into one's diet. Taste, flavour, texture, etc. are important, but so is health.
