Actually, sustainable agricultural development in the developing countries with specialisation in food science. I would reach whole new heights of uselessness and unemployability with this one! Well, to be honest, some international organisations might hire me and the government does grudginly give some development aid and whatnot. At least I'd have unique expertise.

It is definitely niche, but there are certainly practical applications of it. The worst that could come of it is that you end up working for some UN subsidiary group, which could still be a positive experience depending on your ability to tolerate bureaucracy.
