I've never tried my own pasta sauce.. the bride made it once, but it was so acidic, it was hard to eat. We put a bunch of carrots and even some sugar in to try and counteract the acid, but it just wasn't enough.


My recipe is actually very simple.

For a large group:

Brown whatever meat you're using (if any). That could be ground beef or pork, sliced chicken or (in tonight's case) sliced up Italian sausage.

While browning, add sliced veggies. Green and red bell peppers, fresh mushrooms, sometimes celery.

Add a can of tomato paste. Then add a couple of cans of water until you get a consistency you like. I like mine on the thick side.

Finally - season to taste. I use Italian seasoning, garlic powder, a bit of onion powder a dash of basil and oregano and sometimes some pepper (either black or red). It's best to play with the spices to match your taste.

Heat to a near boil and set to simmer for about twenty minutes. I do the pasta while it's simmering.
