I just question the concept that you can learn to eat healthy by looking at what poor people eat. Like I said I was poor as a child and lot of my extended family is still poor and I had to relearn how to eat when I got the 40 and started blowing up like a balloon.

A lot people could much healthier and save money if they just cooked at home. We don't spend tons of money on food but we eat well. Every Wednesday we get out the sales ads out and see who has the best deals on produce and meat and try and plan menus around what is in season and on sale then we fill in the rest with frozen foods or canned food from out garden.

That lentil soup recipe looks good I think I will have to give it a try, I love soups.
