Not sure what you've already played, but the obvious RPG choices are:
Oblivion
Dragon Age
You can't go wrong with either. Oblivion get old for me quickly (did all the guild stuff, the arena, many gates, and then it just became boring), and I have yet to actually finish DA (too many restarts, though I'm committed to my latest toon), but they are both good games, and great console RPG's.
I would also add that you check out Sacred-2: Fallen Angel. It has it's flaws, and the original developer no longer exists, but the game is pure magic in terms of open-world RPG-type action. The main story is a bit bland, and there's no real single driving mission, BUT....the character development is HUGE, the item/weapon development is HUGE, the world is HUGE.
If you enjoy leveling characters (cap is 200), obtaining an insane amount of items that can be modified, fighting small, large and REALLY LARGE enemies of many varieties while exploring wherever you want....it may be the game for you. Graphics are good, action is good, interface is good (though takes a bit getting used to, especially the camera angle). I'm sure you could find a used copy pretty cheap.
