Leatherworking/Skinning are a couple of professions that are inconsistently profitable in respect to the time it takes to gather. It depends on your server and the fluctuations of your market. On my server, it's a rare day I can make MUCH money as a leatherworker...
BUT, if you price it right, most leather DOES sell. Maybe not for much, but it does. Furthermore, as he said, you can send the gear you make from LW to your enchanter, and the nice thing about leatherworking is that, except for the purple gear, it's really easy to have enough mats.

Probably skinning/leatherworking on the Hunter and mining/blacksmithing on the Paladin.

The race really isn't going to matter that much for a paladin IMHO

When it comes to professions: Gathering professions make money. Crafting professions lose them
