FYI, some of the module-specific encounters are published in Bestiary 2 and others will likely be in the upcoming Bestiary 3.
Alternately, you can go to pfsrd.com and download the entire bestiary DB (including all APs and third-party content) as a .csv file. Each entry has a "True Text" field that a .css file you can also download will enable you to print the statblock.
If I make it that far, I'll be using those entries instead of what's in the AP since they're probably better edited even if I have to apply CR-adjusting templates to align with the APL.
I think that any group you DM through it will have a blast. The rest of the Kingmaker messageboard at Paizo has tons and tons of great ideas and advice to offer if you need it... not that you do; you know what you're doing unlike myself

I know I have Jacob as a PC, but I need a few more (since I don't think he wants to run two or three PCs by himself) and I've already tapped out my own friends.
