They were all Coptic Christians when a small band of Arabs conquered them. It's not like the millions of Egyptians then living in Egypt were all killed and the tiny band of Arabs screwed their way into the 78 million range. It's just that, over time, the Egyptians adopted Islam and all started speaking Arabic (including the Coptic Christians). They're all essentially the same, ethnically. A few may have more Arab blood than others.
