Si-o-nah-ra. I have an expert in Japanese history for whom I am TAing. And my transcription is accurate based on US English spelling and pronunciation. Sai/Si will be pronounced Sigh in the English language when a vowel follows . Say will not always be. Sai/Si > Say. Sayonara is the most common spelling currently, but not the best in my opinion. Greater clarity is achieved, probably, by spelling it Saiohnahra.
I is a long E sound when translating. So "si", much like in Spanish, would be pronounced "see", not "sigh". I'm not familiar with the breakdown of the word, but I could buy sa-yo-na-ra or even forgive sa-i-o-na-ra (sa-ee-oh-nah-rah) before your original spelling. It's just that I've always learned it as:
a = ah sound
e = ay or eh sound
i = ee sound
o = oh sound
u = a mix of oo and uh
And I won't even get into the occasions of whispery non-spoken vowels.
