They find this out in the comics when two characters die of natural causes but still turn. However, the TV show doesn't seem to be going the same route given the number of corpses on the freeway still in their cars that weren't zombies.
Human beings, who are almost unique in having the ability to learn from the experience of others, are also remarkable for their apparent disinclination to do so.
