The way you suggest makes sense because that way you get rid of a lot of characters so you can be done with the actors as well. If they end the season like that, they can be done with Robb, Catelyn, various members of their entourage, Joffrey, and so on, and move on with new emphasis on other characters for subsequent seasons (all this of course presumes more seasons).
They will still need Catelyn, she gets ressurected at the end of book 3 and comes back as Lady Stoneheart
