Why did the character of Ms Wickers have to die? I was getting some sympathy for her as the movie progressed, and then she dies a horrible, pointless death. Wouldnt two people have had better chances at survival during further exploration in the Engineer's planet?

Her dying there was a bit pointless. Either have her live or let her stay on Prometheus and die with everyone else. Not sure what the point of that was.

What is the thing that came out of the Engineer's body going to do now?

Presumably, with no nutrition, die. However, the proto-alien might be able to reproduce by itself (as the original alien in ALIEN started doing, even without a queen), leaving behind eggs/canisters/whatever to trap any potential follow-up rescue mission.
