As I understand it, the torture is the knowledge that escape is as easy as climbing out of the pit, preventing people from escaping would go against that.

I mean he could have posted a guard out of sight up top in case anyone did escape, but that's not really important. From a narrative point of view, escaping the pit was the entire ordeal, the guard up top would have been useless in a movie that was already quite long.

But I may be biased here, the Pit was really my favourite part in the entire movie.
The first rule of being a ninja is "do no harm". Unless you intend to do harm, then do lots of harm.
