Sales would double when people wouldn't be driven away by the American covers.
You grossly overestimate the influence of cover art in sales, but the main reason they're not using these covers or repacking the series now is a question of marketing. DKS covers are butt ugly, but that's very secondary to brand recognition, and the DKS images and ugly 1990s layout are instantly recognizable as WOT books. With the 5 years hiatus and a new author on top of this, it's a bad time to change the look of the WOT books. They do it for the e-books because it's a new product.
Harriet and Tor plan to have the packaging of the books redesigned once the series is over, but they're sticking with the current look to the end.
