Shaking hands with someone is a gesture of civility. Ignoring someone you know when you encounter them is discourteous. The farmer is basically saying "why should I shake his hand when he couldn't even be bothered to say hello last time I crossed him?"
The first rule of being a ninja is "do no harm". Unless you intend to do harm, then do lots of harm.
