She held up a plate to check for breathing for, what, 30 seconds? There are poisons/drugs that will put you into a comatose type state where you breath extremely slowly. I'm not saying it's likely that they would have the understanding to use the drugs, but I do think it might be possible.
Jordan/Sanderson went to extra trouble to show that in fact Verin is dead. I doubt they would have went to the extra trouble just for a 'gotcha' moment.
