Might as well put it to good use.
Grey Men souls could be put to the same use too, presumably, but maybe that idea is no so appealing to those fools who submit to becoming Grey Men, and the Dark One, being the kind and considerate God that he is, acquiesces to their wishes, and simply holds/eats them instead.
(Edit: I guess I'm making an assumption there, that human souls are used in Myrddraal swords. I'm not sure we know that, for certain. We know humans are used, but I don't think we know for sure if their souls are used.)
