Might as well put it to good use.
Grey Men souls could be put to the same use too, presumably, but maybe that idea is not so appealing to those fools who submit to becoming Grey Men, and the Dark One, being the kind and considerate God that he is, acquiesces to their wishes, and simply holds/eats them instead.
(Edit: I guess I'm making an assumption there, that human souls are used in Myrddraal swords. I'm not sure we know that, for certain. We know humans are used, but I don't think we know for sure if their souls are used.)

I don't think we really know yet if the forgers have the power to strip people of their souls to make Myrddraal blades. I tend to doubt it, because such things seems to be limited to powerful beings like the DO, Machin Shin and channelers (apparently Ishy tried to pull Rand's soul from him in the end of TDR).
On the other hand, I just realized that draghkar can also take your soul. And Darkhounds can "eat" the souls of wolves. So, maybe the forgers really do something that pulls the soul from the vicitim into the blade, maybe via blood? Otherwise, why should they need humans, just for their "life force". Also Demandred's description in LoC, prologue: "He [the prisoner] shrieked then, the sound dwindling away without losing intensity, as though the screamer had been yanked into unimaginably far distance. Now the blade was done", indicates that something is pulled into the blade.
Might be a nice question for BS sometime.
