The Valar don't really get enough screentime to become that interesting, to be honest. Eddings' gods have their amusing moments, the Troll gods are fun as well. And let's not forget Gaiman's American Gods - and while we're at it, Death and Delerium from Sandman.
I also agree on Gaiman although my favourite was Death
