Elantris, Mistborn, and Warbreaker have all had complex, original magic systems. On his web site, he often randomly thinks of new ones (One I saw was a response to the writing exercise question, "What if having magic made you handicapped?" From that he wrote a brief outline of a group of deaf magic-users.)
