For Old French I currently have:

1. Lais de Marie de France
2. La Chanson de Roland (Oxford Text)
3. Historiens et Chroniqueurs de Moyen Âge (Pléiade) (Robert de Clari, Villehardouin, Joinville, Froissart, Commynes)
4. Tristan et Yseut (Pléiade) (contains Béroul, Thomas, La Folie de Tristan, and what I believe are translations from German based on the authors' names)
5. Chrétien de Troyes - Oeuvres Complètes (Pléiade) (just for clarity's sake - Érec et Énide, Cligès, Yvain, Lancelot, Perceval, and Philomena, Guillaume d'Angleterre, Chansons Courtoises)
6. Le Livre du Graal (Pléiade in 3 volumes) (Joseph d'Arimathie, Merlin, Les Premiers Faits du Roi Arthur, Lancelot (La Marche de Gaule, Galehaut, La Quête de Lancelot), La Quête du Saint Graal, La Mort du Roi Arthur)
7. Le Roman de Renart (Pléiade) (en route)
8. Le Roman de la Rose (en route, may have to re-order, see threads above)

For Old Occitan I really only have the massive volume by Martin de Riquer of troubadour poetry (which is Occitan with Spanish commentary).

So far I'm reading Marie de France and will finish that shortly - it's a short book and a fun read. I think I'll move on to Roland after that, and maybe Villehardouin thereafter, though the sack of Constantinople is painful to read about.
Political correctness is the pettiest form of casuistry.

– Procopius

Ummaka qinnassa nīk!
