I'd stick with standalones for the most part. Ever get her to read any Italo Calvino or Dino Buzzati? I know they're not labeled as being fantasies, but I think the stories might be appealing for precisely the fact that they aren't thousands of pages of turgid prose and cardboard characterizations.

Tim Powers (The Anubis Gates, Last Call, The Stress of Her Regard) might be very suitable, considering what you said. And I'm guessing Mervyn Peake has been tried at some point?
