I didn't do the Captain's dinners, so I can't help there. I wouldn't bother to bring my own snorkel. All the ones I saw had like disposable plastic wrap on them so you weren't actually licking other people's mouth germs.

Yeah, it was either at the check in desk or in a pamphlet in our room what dinner we had. If it's just the two of you, you'll probably get assigned another couple to share your table, too.
FYI, boyfriend has booked us in the slave quarters down in bowels of the ship. The Carnival website won't even feature a picture of the room for fear of repercussions from the Geneva convention.
LOL, we had the same. They aren't as monstrously terrible as you'd think, but they're SMALL. Ours was also a hideous shade of salmon pink.

RE: Land Excursions. We did one through the ship and two through locals. The ship's was pretty overpriced, but my dad definitely thought it was worth it for the peace of mind. They also generally have their own stretch of beach, which is nice if you don't like crowds. I didn't mind hopping in a tour bus with some locals, but YMMV.
