Re: Well, I've never seen a doner kebab, so I can't really speak to that...

But pitas can be made in a variety of ways. First, grilled meat stuffed into a pita with sauce and veggies; secondly rotisseried meat (usually a combination meat, lamb, beef, chicken, pressed into a cylindrical shape) that is shaved into slices and put into pita bread with veggies and sauce; and the third way I've seen pita done was with pre-sliced portions of meat that were heated and put inside pita with sauce and veggies.
Grilled on one of those rotating grills, too? Or a normal one? But yeah, like I said, the difference is slight - döner kebabs have the same thing of sliced meat with veggies and sauce put into a special kind of bread. It's just the meat and bread that are a bit different, and even then not by much, and not even in every case.
The bread is always "pita bread." There might be variation for region or flavors... but it's a six inch round of flatbread.
Yeah, same as the pita bread we got here, then. Around here, kebab bread is much larger, somewhat different in taste, and cut into quarters, so you end up getting a piece of bread that's still larger than a pita, and is open at the top and at one side (makes eating them without everything falling out a bit of a challenge, sometimes). But odds are they use other kinds of bread in other countries.
The fact that döner kebabs are a good bit larger than pitas explains why it's seen as a bit of a health hazard, though - iirc the worst offenders have clocked in at over 2000 cals, which is obviously rather too much to eat in a single meal. I might be misremembering that, but really a ton of calories, anyway.
Do you know the weirdest thing about Scotland?
