They area multi-textured nightmare, and that usually doesn't bother me. You have that layer of just- hardened chocolate with the gooiest marshmallow in the world with a crispy cookie on the bottom. Yuck. 
Oh well, not everybody can have sense.
My favorite cookies are molasses and spice cookies. My father's aunt made them famous. Seriously. I've met people, they hear what town I'm from and compare the last name. They say, "OMG are you related to Grace?!? She makes the BEST molasses cookies!" 
We make those every year, and they are also requested. How dark were hers? Ours are a nice dark rusty color, not dark, but not light brown. And they are awesome.
Sidenote: The type of butter you use can have an effect on the color of baked goods.
