In addition to what the others said you could see a bit of the festival going on. Edinburgh hosts lots of cultural festivals in August, so you might be able to catch the tail end of that if you are interested .
Also you could take a day trip to some other towns/cities nearby. Glasgow is just a couple of hours away.
