Poultry (we use chicken), pork (smoked sausage), seafood (shrimp), broth, roux, onions, file powder. Rice.

Our roux is simple, and blonde. I suspect this is because grandma had six kids. Ain't nobody got time for that.

View original postIf you don't want to go through making the roux you can just use something like Tony Chachere's instant roux. Won't be as good, but it's a hell of a lot easier. Roux is easy to burn.
