I'm going through a similar situation with my grandmother who has been in a home the past 2 years. I have had so many similar thoughts go through my head.

It's awful, it's scary. The one thing my dad reminds me of when we talk about grandma is that is thrilled when people come to visit her or call her. Family is what she is living for now.

So while I can sympthize with your situation and while I love how often you are visiting your dad, I seriously doubt that you are right about the pudding being the highlight of his day.
