Ok, so I read this book a couple weeks ago called Born to Run, and I thought it was brilliant....one of the things the author discussed quite a bit was the way people eat. Specifically he talked about eating like you're poor as a way of eating more healthy. Now this doesn't mean going and eating a bunch of ramen noodles or something like that, but rather eating a diet that consists mainly of staple foods like rice, beans, corn, etc.
As a bit of a personal experiment I'm going to try eating this way for a couple of weeks. So my question for you is what foods/meals would you suggest for eating like this? I'm looking for simple meals that consist mainly of healthy staple type foods.
I already have a number of meals cooked and frozen....so far the ones I have prepared contain brown rice, pinto beans, corn, and green beans. I snack on bananas and apples, I'll be having a whey protein shake each day to make up for the deficencies in certain amino acids that the beans and rice have, and breakfast is usually oatmeal with a bit of raisins or craisins. Basically my goal here is to test a diet that is low on meat, high in fiber, carbs, and relatively low in fat.
So....yeah....ummm...suggestions? I could see getting sick of rice, beans, and corn pretty quickly, and I want to make this experiment last a month or two.
