Unless it's multi-player, you should be able to play most anything in offline mode.

Known exceptions to this rule are games like Assassin's Creed 2, which still bear Ubisoft's über-restrictive DRM. All 3rd party DRM should be listed on the game's store page, though, so you won't be surprised. Here's an example from AC2:
3rd-party DRM: Ubisoft’s Online Services Platform. Ubisoft requires a permanent Internet connection to play this video game at all times.
