Don't play Fable. It is the opposite of everything Morrowind is.
I would highly recommend KOTOR however. And possibly Jade Empire, since it's also made by bioware, and I quite enjoyed it. As for other games... I have no clue.
For RPGs, I am much more knowledgeable about the jrpg branch than the kind you seem to be favoring (though obviously I love both, since I've played nearly all the games you mentioned).
