I guess I am not far enough in to comment on all of these, but...

...what I really like right now are the dungeons. They seem so much more fun and diverse than in Oblivion and I've mostly been to one corner of the map so far.
The difficulty level seems fair and balanced, although it seems to be impossible at my Level 7 to kill dragons and giants all by myself, so I sometimes have to take a detour. But that's okay, realism and all.
The graphics are beautiful.
And I like the menu, easy to go through and get an overview of your stuff.

This. The dungeons are great compared to the abysmal monotony of Oblivion. *NM*

Do you all recommend doing the main quest straightaway? A bit at a time?

That IS always fun, especially if you don't expect to one-shot that particular adversary. *NM*
