we also tend to ignore 7s the first couple of rounds, rerolling them. One of the websites I used to play at used a rule called "Reverse Robber" where when you move the robber you have to put it on either an empty space, or one that only you are on. Only if there is no such space may you be "forced" to rob somebody. Some play this with the slight variation of "reverse robber 7" where you only have to do that on a roll of 7, allowing you to use the Soldier/Knight card to move the robber and rob somebody.
And if she still doesn't give in, make her sleep on the couch LOL

...we always end up playing Carcassonne, Munchkin, or Citadels instead.  Maybe we always cave to my wife's hatred for the evil 7 roll in Settlers.
