Eric is substantially older than Talbot, using his vamp speed would have made no difference, and would have made the scene alot less visible to viewers.
Does anyone else get the feeling that Eric has just signed his and/or Pam's death warrant unless he has one hell of a plan he's about to enact?
What about possibly blaming Talbot's murder on someone else? He was the only person in the room, all he has to do is say he stepped out and came back to a murdered Talbot.
