I can't speak for anyone but myself, but when I'm experiencing PMS, I definitely do go through mood swings. I have a temper anyway, but I can generally control myself. When I start to notice that I have less control, I'm typically confused for a few minutes before: "Oh. Yeah." So, as always, there is truth behind the stereotypes. It's just irritating when people take them too far.
