In the case of Angel, there's a bunch of things in that last season that feel strange/rushed - the Fred-Illyria thing and the killing of Lindsey are just the most obvious ones. Though the general idea of "it never ends" was pretty good.
And then Firefly didn't even really get to have any kind of season finale, so, well.
