Mine would be a toss-up between Mat's letter to Elayne and his insulting the Aelfinn near the end of the book. I couldn't stop laughing ("laffing" as Mat spelled it in his letter) at that.

The part where he tells Cadsuane she can call him Rand Sedai if she wants. Priceless!
It's an awesome moment. You just can't compete with the original greatest Aes Sedai of the previous Age. From humbling her with the weight of his years to mentioning that he wore the original male ter'angreal in the paralis-net, I just loved every moment. And he did it in such a nice way... Like Lews Therin telling someone they're wrong in a kind way.
