Nynaeve is actually very good at using the power instinctively, as well, and not just in healing. In her test for Accepted she called down lightning from the sky, threw fireballs, and broke buildings, and that was before anyone started training her. That was just what she could do by instinct without her block.
We see this again in ToM in her test for the shawl, and Egwene commented on it: her ability to use "useless" weaves as weapons and hindrances.
She is similar to Aviendha in the way she channels by instinct and with ingenuity. She is not (and wasn't even when Cadsuane made this comment) completely ignorant of ways to use the power that aren't healing. She is actually very skilled and dexterous at using the Power in whatever way she can imagine.
What Cadsuane should have said was "It's remarkable how well you do everything, without having much of it taught to you."
That comment bugged me as well. Look at when it's made. After a bunch of Mog's knowledge was filtered through Nynaeve. Cadsuane hadn't returned to the rebels, the rebel embassy left early LOC before most discoveries were 'made' by Elayne and Nynaeve, so here Cadsuane meets a channeler stronger then her, who can a whole bunch of things no other Aes Sedai has been able to do since the Age of Legends AND is a superb Healer on top of that, and she's meant to be unskilled in the One Power!?!?! What does that make every other Aes Sedai outside the Forsaken and Rand, including herself?!
If the comment had been skilled at the One Power, but otherwise unskilled at everything, it could be taken as Cads arrogance and sounded true, but it wasn't.
