I think Rand's wounds started the process, and as he's gotten more and more corrupted the OP is starting to reject his body.
Basically I think it's tied to the same thing that's happening to the food ... his soul is becoming darker (he's been infected with two kinds of evil after all) and the land is dying around him, the OP is part of the land in loose terms and is in a way an opposing force to what's happening to Rand.
