Elantris is a very poor example of Sanderson's work.

And I'm not a great fan (but well aware that I am judging on a very small sample). Still, I am glad you found a book you like so much.
We've had this conversation before. Elantris has some great concepts and moments, but it is a very flawed and rough novel. Sanderson has continually improved in his command of both the written word and in his story telling. Each of the Mistborn novels shows improvement, and the first one already being a good deal better than Elantris. Warbreaker shows a more practiced hand at characterization and the use of varied PoV to change what and how the reader sees something. Way of Kings is a very well written, characterized, told, epic fantasy... that is character driven rather than magic/action driven.
I would definitely recommend that you give Sanderson another try at a later date. Warbreaker being a nice stand alone volume is a great place to try again.

Well, you've seen the books I tend to read and those are unusual in regards to dialogue quality

And I think that books 5, 6, and 8 are among Erikson's better novels
