1 - Approximately how many books do you read in the average month?

Probably not more than 3 or so.
2 - Of those books, what ratio would be Sci-fi/Fantasy compared with Not SFF? (Ie SFF:NotSFF)

Hm. About two thirds SFF, I guess.
3 - (with credit to Tom) Which of these do you read:

Fantasy

Lots.
Sci-fi

Rarely.
Historical Fiction

Sometimes.
Classics

Relatively often.
Thrillers

Occasionally.
Crime/Mystery

Sometimes, mostly just Christie or Conan Doyle though.
Other fiction stuff (like Ian McEwan, Kazuo Ishiguro etc)

Sometimes.
Non-fiction

Sometimes.
Graphic Novels

Occasionally.
Manga

Not.
Plays

Rarely.
Poetry

Also rarely.
Short stories (please specify what genre they might belong to)

Rarely, unless you count detective ones.
Magazines

Regularly.
Newspapers

Daily.
4 - Do you read every day?

The newspaper, yes, and most days I'll do at least some reading in books.
5 - Do you find it easy to discuss the books you read?

Depends on the book and on the person. I know some RL folks who are sort of into SFF, but rarely to the same extent I am... but for other books, sure.
5a - If not, do you know what might make it easier?

6 - Do you buy books as soon as they are published?

Only very rarely. I do it with WoT because I've done it for the past few books, and because I want to have read it asap so I can discuss it. Also did it with the last two Harry Potters, and will probably do it with Martin. Otherwise, no, though Erikson I tend to buy as soon as the paperback's out.
7 - What do you like to see in reviews?

Hm. Any review that gives the reader an accurate impression of what the book is like and whether he might like it or not is a good one, really, but that can be done in different ways, depending on the reviewer and on the book. I guess the most important factor is pointing out what's special about the reviewed book and why people would want to read it - or if it's not to everyone's taste, who'd like to read it and who wouldn't.
