If you ask 10 random people on the street what tree they were looking at, how many do you think would know? It just bugs me that ordinary people in these books all know what the different trees are

Depends where you are. And, woah, weird, some of us are in the agricultural business.:P Sticking with your example, it's not that uncommon to know something about nature if you're a character in a series that begins in an arable community.

And Ghavrel is completely correct about the religious/mythological connections.
