I started out reading fantasy when I picked up The dragon reborn on a whim and I haven't looked back since.
I've loved all of the WOT books, flaws and all, and here are the first books in a few other series that you may like:
The Name of The Wind - The King Killer chronicle
Furies of Calderon - Codex Alera
Assasins Apprentice - The Farseer Trilogy
If you prefer to try something a bit darker then these are great:
A Game of Thrones - A Song of Ice and Fire
The Blade Itself - The First Law
Winterbirth - The Godless World
