Agree, some of the new metal bands can sound the same. I think I've found a mix of some solid bands in the different sub-groups of metal and have a good variety from death, black, nu, etc. I've listened to it long enough to hear differences where most people don't. My wife asked me the other day how I could tell one band from the other!
I think being familiar with it does make a big difference - if I liked metal enough to listen more then I'd imagine it wouldn't sound so samey to me. There is an amount of me getting bored of any one type if I listen to it too much as well though.
