Hyphens are used to join words together - like in tax-free limit - and dashes are for separating thoughts/adding extra information (like I did in this sentence).
I tend to use the word "dash" for all those things without thinking about it, but that's incorrect.
Of course, just to be annoying I have to add that a proper em-dash is formed with ALT-0151 (—). :p
Well, yes. But I wanted an en-dash for my dashes and I don't know how to make them except with ALT+hyphen. I don't think that works in Internet browsers, just in the programs we use at work for creating and editing documents. 

An en-dash is formed on the Internet (and in most text programs) via ALT-0150 (–). It's like magic. Keyboard magic.
Tim keeps trying to get me to learn those keyboard shortcuts but I prefer to leave it for the nerds.

Assuming you have Windows, but I assume Mac has an equivalent utility if not; in the former case, you can just type "charmap" into the search function and Windows will dutifully find it for you (which is when I generally yank it over the desktop so I have it ready to hand when I want to type something like, say, a lemniscate.) I recommend extended ASCII because there are not many characters, most of them you do not need to learn anyway (while you CAN make an "F" with ALT+70, it is easier to just use SHIFT+F) and all of them are, so I understand, the same in Unicode. Some just become second nature because they get used so much (in my case, ALT+248 for "°" and ALT+241 for "±"
